Cake
2 1/4 cups sifted cake flour (sifted, then measured)
2 tablespoons unsweetened cocoa powder
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup buttermilk
1 tablespoon red food coloring
1 teaspoon distilled white vinegar
1 teaspoon vanilla extract
1 1/2 cups sugar
1/2 cup (1 stick) unsalted butter, room temperature
2 large eggs
Frosting
2 8-ounce packages cream cheese, room temperature
1/2 cup (1 stick) unsalted butter, room temperature
1 tablespoon vanilla extract
2 1/2 cups powdered sugar
3 1/2-pint baskets fresh raspberries
3 1/2-pint baskets fresh blueberries
preparation
For cake:
Preheat oven to 350°F. Butter and flour two 9-inch-diameter cake pans with 1 1/2-inch-high sides. Sift sifted flour, cocoa powder, baking powder, baking soda, and salt into medium bowl. Whisk buttermilk, food coloring, vinegar, and vanilla in small bowl to blend. Using electric mixer, beat sugar and butter in large bowl until well blended. Add eggs 1 at a time, beating until well blended after each addition. Beat in dry ingredients in 4 additions alternately with buttermilk mixture in 3 additions.
Divide batter between prepared pans. Bake cakes until tester inserted into center comes out clean, about 27 minutes. Cool in pans on racks 10 minutes. Turn cakes out onto racks; cool completely.
For frosting:
Beat cream cheese and butter in large bowl until smooth. Beat in vanilla. Add powdered sugar and beat until smooth.
Place 1 cake layer, flat side up, on platter. Spread 1 cup frosting over top of cake. Arrange 1 basket raspberries and 1/2 basket blueberries atop frosting, pressing lightly to adhere. Top with second cake layer, flat side down. Spread remaining frosting over top and sides of cake. Arrange remaining berries decoratively over top of cake. (Can be made 1 day ahead. Cover and refrigerate. Let stand at room temperature 1 hour before serving.)

Red Velvet Cake

INGREDIENTS:
2 1/2 c all purpose flour
1 1/2 c sugar
2 tablespoons cocoa
1teaspoon soda
1 teaspoon salt
2 eggs
1/2 c oil
1 c buttermilk
2 oz (1/4 cup) red food coloring
1 teaspoon vanilla
Icing, below
PREPARATION:
Place all dry ingredients in bowl; stir to blend. In another bowl, blend eggs with fork. Add oil and blend again. Add egg mixture to dry ingredients and mix with wire whip until smooth. Add and blend buttermilk, food coloring, and vanilla into the batter.
Pour equally into three greased and floured 8-inch cake pans. Bake at 350 for 30 minutes. Cool ten minutes and remove from pans.
Icing
1/2 stick butter
8 oz cream cheese
1 lb box of powdered sugar
dash of salt
1/2 tsp vanilla
1 c chopped nuts
Mix icing ingredients together until light and fluffy. Frost and fill cake.
Resep RED VELVET CAKE (kuehnya Oprah)
Bahan A :
3 1/2 cup = 385 gram, terigu protein sedang (all purpose)
1/2 cup = 55 gram, coklat bubuk
1 1/2 sdt garam
Bahan B :
2 cup = 473 cc, minyak goreng
2 1/4 = 506 gram, cup gula pasir/gula halus
3 btr telur
1 1/2 sdt vanili bubuk
pewarna merah secukupnya
Bahan C :
2 bh Bit (± 300 gr)
200 cc air
Bahan D :
1 1/4 cup = 295 cc, susu UHT plain
2 sdm air lemon atau jeruk nipis
Bahan E :
2 sdt soda kue
2 1/2 sdt air lemon/jeruk nipis
CHEESE FROSTING :
Bahan :
250 gr cream cheese
100 gr butter
2 cup = 450 gram, gula bubuk
2 cup = 473 cc, fresh cream
Cara membuat cake nya :
1. Blender potongan bit dengan air (bahan C) lalu masak dengan api kecil hingga air susut setengahnya. Saring dan ukur 100 cc. Sisihkan dan biarkan dingin.
2. Campur susu dan air lemon (bahan D), aduk rata dan sisihkan. Bentuk akhir akan mengental seperti yoghurt. Ini yang namanya BUTTERMILK.
3. Panaskan oven dan siapkan 3 loyang bundar dengan diameter 24 cm, alasi dengan kertas roti dan olesi dengan margarin.
4. Campur semua bahan A lalu ayak.
5. Campur lalu kocok gula halus dan minyak sampai rata. Masukkan telur satu per satu (with low speed), kocok hingga rata.
Tambahkan juice bit, pewarna dan vanilli lalu aduk rata.
>> Kalau pada step ini yang dipakai gula pasir, gunakan chopper (bukan mixer). Caranya, masukkan gula ke dalam chopper lalu tambahkan sedikit minyak dan giling hingga halus. Lalu satukan dengan sisa minyak. Mixer hingga rata.
(ikuti step selanjutnya spt diatas)
6. Masukkan campuran terigu ke dalam adonan, mixer (dengan low speed) hingga tercampur rata.
7. Tambahkan buttermilk, aduk rata dengan spatula.
8. Campur bahan E (dibuat dadakan aja ya) lalu masukkan ke dalam adonan, aduk rata.
9. Tuang adonan ke dalam 3 loyang lalu panggang sampai matang.
Siapkan cheese frosting.
Cara membuat CHEESE FROSTING :
1. Campur cream cheese, butter dan gula bubuk lalu kocok hingga lembut. Sisihkan.
2. Dalam wadah terpisah, kocok freshcream hingga mengembang (jadi whipcream), lalu masukkan campuran cream cheese, mixer dengan low speed hingga tercampur rata.
Penyelesaian :
Ambil selembar cake lalu olesi atasnya dengan cheese frosting secukupnya lalu tutup dengan selembar cake lagi. Selesaikan sampai cake yang ke 3. Lalu cover semua permukaannya dengan sisa cheese frosting.
Simpan di kulkas dan siap dinikmati.
Catatan :
Sebaiknya saat di dalam kulkas cake disimpan dalam keadaan tertutup.
Sesaat dari dalam kulkas potongan cake agak sedikit membeku, keluarkan dan biarkan sebentar sebelum disantap... cake akan menjadi lembut dan moist kembali (ciri khas kue dengan pemakaian bahan minyak goreng).
Untuk hasil frosting yang lebih lembut, gula halus bisa diganti dengan glucosa cair.
Kalau tidak ingin cake nya terlalu tinggi, gunakan 2/3 resep saja dengan2 loyang bundar diameter 24 cm.
